Nancy Joie's Chocolate Chip Oatmeal Cookies—
During the summers of my college years, I worked as a carrier for the United States Post Office. There was always lots and lots of walking! I burned up lots and lots of calories every day!
It just so happened that during one of those summers—it was 1976, I believe—I was reading "The Lord Of The Rings" for the very first time—and loving it! Perhaps because I was studying to be a biochemist, I was particularly fascinated by lembas (Elven waybread) and its seemingly magical property to keep one alive even when eating nothing else. I thought to myself—this is exactly what I need when I am out walking all day!
Well, needless to say, I am not a magician—or an Elf—so I decided to make cookies that would provide me with a high-energy punch when I started dragging in the afternoon. I tried several different recipes, but finally decided on one that is based—more or less—on the Nestle Toll House chocolate chip cookie recipe—except that my version contains honey! Oh, yes—and while you may bake your cookies to whatever consistency you wish, I tend to the more chewy side. One last item—for some real excitement, substitute some or all of the chocolate chips with butterscotch chips! You cannot go wrong!
